A gorgeous stack of pancakes that are fluffy, delicious and healthy all at the same time?
Count me in.
This week I had the chance to collaborate with my friend Ellie (over at LikelyFit) on these gorgeous healthy banana chocolate chip pancakes. Not only are they the easiest thing EVER to make, but they also taste heavenly!
Don’t let the banana part scare you away. This coming from someone that hates bananas, I will guarantee that you will love these regardless, because the flavor is not that distinct. You’ve just got to trust me on this one.
Bursting with mini dark chocolate chips, sprinkled with fresh berries and drizzled with velvety maple syrup, you simply can’t beat these. If you’re not feeling the syrup, some melted chocolate or a dusting of powdered sugar would be equally as divine!
Serve it up with a steaming mug of coffee and you’ve got the best protein-packed breakfast that doesn’t taste or feel like it should be this healthy!
Healthy Dark Chocolate Chip Pancakes
Ingredients
- 1/2 cup rolled oats
- 1 banana
- 2 egg whites
- 1 tsp baking soda
- 1/4 cup plain greek yogurt
- 1/4 cup Enjoy Life mini dark chocolate chips (normal chocolate chips will work too)
Directions
- Combine all ingredients (except the chocolate chips) in a blender and blend until smooth.
- Stir chocolate chips in batter
- Cook pancakes on a hot skillet sprayed with coconut oil
- Top with maple syrup, strawberries, and raspberries!
(yields about 6 small pancakes)
It really doesn’t get better than this, because these pancakes seem way too good to be true!
